Albanian cuisine

Albanian cooking is Mediterranean with an Ottoman thread: lamb, yoghurt, olive oil and layered pies.

Yoghurt here is not only a drink and a sauce but the base of baked dishes — a technique neither the Greeks nor the Italians next door share.

Thin-pastry pies are baked everywhere and called byrek whatever the filling, unlike Bosnia, where each filling has its own name.
