Bhutanese cuisine

Bhutanese cooking is built on chilli treated as a vegetable, on cheese, and on red mountain rice.

Bhutanese eat chilli in quantities other cuisines would consider impossible: it is the main vegetable rather than a seasoning, and dishes without it are called children's food.

The red rice grows above two thousand metres, takes longer than white and stays slightly sticky — which suits cheese sauces exactly.
