Irish cooking is plain in its ingredients and precise in its technique: potato, lamb, dairy and soda bread.

The potato here is an ingredient with varieties and purposes rather than a side: floury for mash and for thickening a stew, waxy for pieces.

Soda bread appeared because soft Irish wheat works poorly with yeast. Bicarbonate and buttermilk solved the problem differently, and the result is a bread baked start to finish within the hour.
