Kenyan cuisine

Kenyan cooking is plain in its ingredients and built around ugali, stewed greens and meat over coals.

Ugali, a stiff maize porridge, does the work of bread here. It is broken off with the fingers and used to pick up everything else.

Indian influence is plain on the coast: chapati, samosa and spices arrived with traders and became local long ago.
