Kuwaiti cooking is maritime and aromatic: Gulf prawns, rice, dill and dried lime in nearly every dish.

Before the oil Kuwait lived by pearl diving and sea trade, and its cooking kept the mark: fish and prawns are the base rather than an addition.

Dill appears in Kuwaiti dishes more than anywhere else in the Arab world, and the local rice is recognised by it at once.
