Maldivian cuisine

Maldivian cooking rests on three ingredients — tuna, coconut and starchy roots — and very little else.

Almost nothing grows on the islands beyond coconut and a few root crops, and the cooking formed around that limit rather than despite it.

Tuna is eaten fresh, smoked, dried and as rihaakuru — a thick paste of reduced broth that keeps for months without refrigeration.
