Mexican cuisine

Mexican cooking is built on corn, chillies and lime, where heat is a flavour rather than a level.

Mexican cooking uses dozens of chillies, chosen for flavour rather than heat: smoky chipotle, fruity ancho and fresh jalapeño turn the same ingredients into different dishes.

Corn is the base rather than a side: tortillas, tamales, atole. The wheat tortilla of the north is the exception, not the rule.

  • Guacamole

Avocado, lime, onion and chilli crushed with a fork. No blender and no sour cream: both turn it into a dip rather than guacamole.
