Macedonian cuisine

Macedonian cooking is vegetable-led and pepper-heavy: beans, roasted peppers, white cheese and a great deal of paprika.

In autumn whole families make ajvar, the roasted pepper relish, for the entire winter. It is an event in the calendar rather than simple preserving.

Clay is in constant use: beans bake in a tavče, meat stews in individual pots, and both come to the table in the vessel they cooked in.
