South African cuisine

South African cooking is assembled from African, Dutch, Malay and Indian, and its central ritual is the braai.

A braai is not simply a barbecue but a way of spending time: it has its own national day and its own set of rules that people argue about in earnest.

Cape Malay cooking brought curry and sweet-spiced combinations, and Durban's Indian community brought bunny chow and a masala tradition of its own.
