Sudanese cooking joins Arab and East African: sorghum, beans, sesame oil and slippery okra sauces.
Sesame oil is the everyday fat here — used for dressing rather than frying. Sudan is among the world's largest sesame producers.
Food comes on one shared tray and is eaten with the right hand, dipping kisra bread or pinching off asida. Individual plates are not laid.
