Taiwanese cuisine

Taiwanese cooking grew out of Fujian, took on Japanese influence, and lives on its night markets.

The night markets are a way of having dinner rather than a tourist programme. Many dishes exist only there and are never served in restaurants.

Half a century of Japanese rule left its mark on technique and ingredients: Taiwanese eat sashimi, miso and tempura as their own rather than as borrowings.
