Tanzanian cuisine
Tanzanian cooking is divided by the coast: spices and coconut on Zanzibar, ugali, bananas and stewed meat inland.
Zanzibar was the world centre of the clove trade, and coastal cooking is so heavily spiced that mainland Tanzanians treat it as a separate tradition.
On the coast coconut milk does the work of both stock and cream: fish, vegetables, beans and rice are all cooked in it.
