Emirati cooking joins a Bedouin base to Indian and Persian influence: rice, fish, dates and spice.

The coast lived off the sea long before the oil, and fish and prawns hold the place in Emirati cooking that lamb holds inland.

The bizar blend arrived on trading dhows from India and became local: milder than garam masala and always built on turmeric.
