Gluten-free dishes

Recipes on rice, corn, buckwheat, cassava and pulses — no wheat, rye or barley.

Whole cuisines manage without wheat: the corn masa of Central America, the rice flour of Southeast Asia, cassava starch in Africa and South America give bread, flatbreads and thickeners that never needed wheat at all.

The label follows the recipe's ingredients. Soy sauce, stock cubes and raising agents sometimes contain wheat — when cooking for someone with coeliac disease, those items are worth checking on the packet separately.
