Vegetarian dishes from around the world

National dishes without meat or fish — ones that were meant that way.

These are not meat recipes rebuilt around mushrooms, but dishes their own cuisines cook without meat to begin with: fasting days, expensive meat and the vegetarian traditions of whole regions produced a body of recipes of their own.

The label follows the ingredients rather than the intent. A recipe with fish sauce, dried shrimp or meat broth in it stays out of this collection even when no meat is visible.
