Degrees, gas marks and the fan

Converts an oven temperature between Celsius, Fahrenheit and gas marks, and shows the setting to use when the fan is running.

Recipes arrive from everywhere and the oven is only one. A British author writes 'gas mark 4', an American one writes '350 °F', and both mean the ordinary 180 degrees. The conversion comes up almost every time you cook from a source written elsewhere.

The fan is a separate matter. A convection oven moves hot air across the food, heat transfer rises, and at the same number on the dial the bake browns faster at the edges. The standard correction is 20 degrees below whatever a conventional recipe states.

What to keep in mind

Gas marks run from 1/4 to 9 in steps of 10 to 20 degrees, so the nearest mark is chosen.
The 20-degree fan correction is an average: some manufacturers state 15, powerful ovens want 25.

FAQs

What is 180 °C in Fahrenheit?

356 °F by the formula, but recipes round it to 350 °F. Six degrees makes no difference to a bake — the oven's own thermostat swings further than that.

How much do I subtract for a fan oven?

Twenty degrees from the conventional temperature. The time drops by roughly a tenth as well, so start checking earlier than the recipe says.

What are gas marks?

The scale on British and Irish gas ovens. Mark 1 is 140 °C, each step adds 10 to 20 degrees, and mark 9 is 240 °C.

Why does everything burn at the right temperature?

Usually because the oven is not at the temperature it claims — a gap of 15 to 25 degrees is entirely normal. Check it once with a separate thermometer and remember your oven's offset.

Output: 180 °C, 350 °F, 160 °C with the fan

Note: This is the most common baking temperature there is: sponges, loaf cakes, open tarts. Bake it on convection without adjusting and the top sets long before the middle is done.
